Doyon JAOP14 46 Pan Electric Combination Oven/Proofer . The 46 Pan Electric Combination Oven/Proofer (JAOP14) from Doyon is a versatile option for commercial foodservice establishments. Baking bagels, crusty breads, baguettes and other items is a snap in this oven and proofer unit, as it has a uniform steam injection system. Restaurants and bakeries will find the Doyon’s patented Jet Air System to be especially useful. The system works by moving air in one direction for 2-1/2 minutes, stopping for 25 seconds, then moving air the other direction for 2-1/2 minutes. The air circulation allows products to bake more evenly than in competitor’s units. This unit has a stainless steel construction and standard features, such as a timer, interior lighting and more. The oven can hold 14 standard sheet pans (18" x 26") while the proofer can hold 32 pans of the same size. The JAOP14 comes with a one year parts and labor limited warranty from Doyon.
